Ingredients
  • 2 (3 oz) packages of cherry Jell-O
  • 1 1/2 cups water
  • 1 teaspoon almond extract
  • 1 (20 oz) can crushed pineapple, drained
  • 1 cup chopped pecans
  • 1 (10-oz) jar Maraschino cherries, divided
  • 14 oz (1 3/4 cups) Cherry Coke
  • 1 (8 oz) tub frozen whipped topping, thawed
Preparation
  1. Pour cola into medium bowl and set aside for at least 15 minutes while preparing other ingredients.
  2. Bring water to boil and then combine with Jell-o. Stir until dissolved and remove from het. Add almond extract and stir before pouring into a large bowl. Refrigerate for 15 minutes. While Jell-O is cooling combine pineapple, half the cherries, and pecans.
  3. Pour Coca-Cola into Jell-O slowly and then stir gently to combine. Fold in pineapple mixture into Jell-O, then add to serving dish. Refrigerate for 4-6 hours. When ready to serve top Jell-O with whipped topping and dot with reserved cherries.
