Ingredients
  • 1 lb lean ground beef
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (10 oz) can enchilada sauce
  • 1 (16 oz) can refrigerator biscuits
  • 1 1/2 cups shredded Mexican Cheese blend
  • Kosher salt and freshly ground black pepper, to taste
For serving:
  • Sour cream, as needed
  • Green onions, sliced, as needed
Preparation
  1. Preheat oven to 350°F and grease an 8x11-inch baking dish with nonstick spray.
  2. In a large skillet over medium-high heat, season ground beef with salt and pepper and brown until no longer pink. Drain fat, if needed.
  3. Stir in enchilada sauce and black beans and pour mixture into baking dish.
  4. Cut each biscuit into quarters and add to ground beef mixture. Gently stir to combine, making sure biscuit dough is arranged evenly across the dish.
  5. Bake until biscuits are cooked through, about 25 minutes. Top with cheese and return to oven for 10 minutes more. Let sit 5 minutes before serving. Enjoy!
