Ingredients

  • 8 eggs
  • 1/4 cup heavy cream
  • 2 garlic cloves, minced
  • 1/4 teaspoon sea salt, plus more as needed
  • freshly ground black pepper
  • 1 tablespoon olive oil
  • 2 cups chopped broccoli
  • 1/4 teaspoon smoked paprika
  • 5 scallions, finely chopped
  • 1 cup shredded cheddar cheese
  • fresh parsley for garnish

Preparation

  1. Preheat oven to 400˚F. Whisk together eggs, cream, garlic, salt, and pepper. Set aside.
  2. Heat oil over medium in 12” oven-safe skillet. Add broccoli to pan and add more salt and pepper to taste.
  3. Cook for 5 to 8 minutes or until broccoli is tender. Add paprika and scallions to pan and stir. Pour eggs on top and stir gently to combine.
  4. Add cheese on top and bake for 15 to 20 minutes or until eggs are completely set. Cover with foil part way through baking if top browns too quickly. Cut into wedges and garnish with parsley to serve.
