BLT Pasta Salad

Ingredients

  • 1 lb bacon, cooked and crumbled
  • 16 oz dry elbow macaroni
  • 1/2 cup mayonnaise
  • 1 cup sour cream
  • 1 tablespoon ranch seasoning
  • 2 tablespoons granulated sugar
  • 2 tablespoons apple cider vinegar
  • 1 1/2 cups cherry tomatoes, halved
  • 1/2 red onion, diced
  • 1 1/2 cups romaine hearts, roughly chopped
  • Kosher salt and freshly ground black pepper, to taste

Preparation

  1. In a large pot of salted boiling water, cook the macaroni 2 minutes more than package directions indicate. Drain and set aside.
  2. In a large bowl, whisk together mayo, sour cream, ranch seasoning, sugar, and apple cider vinegar.
  3. Add macaroni, bacon, tomatoes, onion, and lettuce and stir to combine. Season to taste with salt and pepper.
  4. Serve chilled or at room temperature. Enjoy!
