Casserole:
  • 2 pounds ground beef
  • 1 tablespoon butter
  • 1 cup Thousand Island dressing
  • 1/4 cup mayo
  • 1 cup diced yellow onion
  • 1 cup diced dill pickle
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Colby Jack cheese
  • 24 oz frozen tater tots
  • Salt and pepper to taste
Topping:
  • 1 cup shredded iceberg lettuce
  • 1/4 cup Thousand Island dressing
Preparation
  1. Preheat oven to 400F. Grease a 9x13 pan and set aside.
  2. Place ground beef and butter in a large skillet. Cook on medium-high, crumbling the ground beef as it cooks. Drain excess grease.
  3. Add Thousand Island dressing, mayo, diced onion, diced dill pickle, onion powder, garlic powder, salt, and pepper to the pan with the beef. Stir until all of the ingredients are fully combined.
  4. Pour ground beef mixture into prepared pan and sprinkle both kinds of cheese on top, followed by a single layer of tater tots.
  5. Bake 40-45 minutes or until tots are golden-brown. Once done, sprinkle lettuce on top, followed by a drizzle of Thousand Island Dressing.
  6. Serve up warm and enjoy!
