Ingredients
  • 2 cups cooked chicken, shredded
  • 2 cups Monterey Jack cheese, grated
  • 8 oz cream cheese, softened
  • 1 tablespoon chili powder or taco seasoning
  • 1/3 cup salsa of choice
  • 8 flour tortillas (soft taco size)
  • Kosher salt and freshly ground black pepper, to taste
  • Neutral cooking oil, as needed
Preparation
  1. Preheat oven to 400°F and line a baking sheet with foil. Brush foil evenly with oil.
  2. In a medium bowl, combine chicken, cheese, cream cheese, chili powder or taco seasoning, and salsa. Stir to combine, then season to taste with salt and pepper.
  3. Spoon chicken filling in the center of each tortilla, then roll each tortilla up tightly.
  4. Place rolled tortillas on prepared baking sheet, seam side down, then brush the top and sides of the tortilla with oil.
  5. Bake until tortillas are golden brown, 10-15 minutes. Serve with your favorite dip and enjoy!
