Bacon Ranch Cheesy Potatoes

Ingredients

  • 2 lbs potatoes, peeled and cubed
  • 1 cup ranch dressing
  • 1/4 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/2 tablespoon dried onion flakes
  • 1/4 teaspoon paprika
  • 1 1/2 cups cheddar cheese, grated
  • 6 slices bacon, cooked and crumbled
  • Chives or green onion, sliced, for garnish
  • Kosher salt and freshly ground black pepper, to taste

Preparation

  1. Preheat oven to 400°F.
  2. Add potatoes to a large pot and cover with cold salted water. Bring to a boil over high heat.
  3. Reduce heat to medium-high and cook until potatoes are tender, 8-10 minutes.
  4. Meanwhile, mix together the ranch, sour cream, garlic powder, onion flakes, salt, pepper, and half of the cheese.
  5. Drain potatoes and place in a 9x9-inch baking dish or oven-safe skillet.
  6. Pour ranch mixture over potatoes and stir to combine. Bake until hot and bubbly, 15 minutes.
  7. Remove from oven, top with bacon and remaining cheese and return to oven until cheese is melted and golden brown, about 5 minutes. Serve with chives or green onion, and enjoy!
