Ingredients
  • 2 (12 oz.) packages frozen corn, thawed
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 tablespoons unsalted butter, room temperature
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper
  • 3/4 cup sharp cheddar cheese, grated
  • 3/4 cup monterey jack cheese, grated
  • 8-10 slices bacon, cooked and crumbled, plus more for garnish
Preparation
  1. Preheat oven to 350ΒΊ F and lightly grease a 9x13-inch baking dish.
  2. Combine 1 (12 oz.) package corn, eggs, flour, sugar, butter, garlic powder, onion powder and cayenne pepper in a food processor, then season with salt and pepper and pulse until mixture is almost smooth.
  3. Transfer mixture to a large bowl and stir in remaining corn, 1/2 cup cheddar cheese, 1/2 cup monterey jack cheese and 3/4 crumbled bacon.
  4. Top with remaining cheese and bacon, then place baking dish in oven and bake for 25-30 minutes, or until hot and bubbly.
  5. Remove from oven and serve hot.
And trust us, don't skimp on the bacon!
