Ingredients
  • Cake:
  • 3 cups all-purpose flour
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 3 eggs
  • 2 teaspoons cinnamon
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 cups apples, peeled and diced
  • Frosting:
  • 1/2 cup (1 stick) unsalted butter
  • 1 cup brown sugar
  • 1/4 cup evaporated milk
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
Preparation
  1. Preheat oven to 350ΒΊ F and lightly grease a 12x17-inch jelly roll pan with butter or non-spray.
  2. In a large bowl, whisk together flour, sugar, brown sugar, cinnamon, baking soda, baking powder and salt until combined.
  3. Beat in oil, then add eggs one by one and mix in vanilla extract.
  4. Once batter is fully incorporated and smooth, gently fold in diced apples.
  5. Pour batter onto greased baking sheet and place in oven. Bake for 15-17 minutes, or until toothpick inserted in center comes out mostly clean.
  6. Remove from oven and set aside.
  7. While cake bakes, combine butter and brown sugar in a medium saucepan over medium-heat heat, stirring until butter is melted and brown sugar has fully dissolved. Pour in evaporated milk, then bring mixture to a boil.
  8. Cook for 2 minutes, then stir in vanilla extract and salt. Remove from heat and use a hand mixer to beat until mixture has thickened into a spreadable frosting.
  9. Spread over cake, then let set at least 30 minutes before slicing and serving. Enjoy!
