Ingredients
  • 21 oz can apple pie filling
  • 6 medium-sized flour tortillas
  • ½ cup white sugar
  • ¾ cup brown sugar
  • ⅓ cup water
  • ⅓ cup butter
  • 1 teaspoon cinnamon
Preparation
  1. Preheat oven to 350 degrees F and grease an 8x8 baking dish.
  2. Working one at a time, spoon the apple pie filling into the tortillas, roll tightly, and place in the baking dish with the seam side down.
  3. In a small saucepan, add the white sugar, brown sugar, water, butter, and cinnamon. Bring to a boil and then simmer for 3-4 minutes while stirring constantly.
  4. Remove sauce from heat and pour over the prepared enchiladas.
  5. Bake for 25-30 minutes or until they’re just starting to brown on top.
  6. Serve warm with whipped cream or ice cream.
