Ingredients
  • 1 tablespoon vegetable oil
  • 1 small onion, finely diced
  • 1 cup frozen carrot pea and corn medley, defrosted
  • 1 garlic clove, minced
  • 2 tablespoons raisins
  • 3 cups cooked rice
  • 4 tablespoons ketchup
  • 2 tablespoons sodium-reduced soy-sauce
  • 3/4 teaspoon black pepper
  • 4 sunny side eggs, for garnish
  • 4 ham slices, for garnish
Preparation
  1. In a large nonstick skillet, melt butter and saute onions until slightly softened, about 7 to 10 minutes. Add in vegetable medley garlic, and raisins, cooking for 30 seconds or until the garlic is fragrant.
  2. Add in rice, using a spatula to break apart the rice and incorporate it in with the vegetables.
  3. Mix in ketchup, soy sauce, and black pepper.
  4. Cook on medium-high heat or until some of the rice starts to get crispy, about 3 to 5 minutes. Serve immediately with freshly cooked eggs and fried ham slices, enjoy!
