Ingredients
  • 2 cups vanilla bean full-fat ice cream, softened
  • 1 1/2 cups self-rising flour (Note: If using all-purpose flour, add 1 tablespoon of baking powder + 3/4 teaspoon salt)
  • Optional: Rainbow sprinkles
Preparation
  1. Preheat oven to 350°F. Spray a 9x5 loaf pan with non-stick spray, set aside.
  2. In a large bowl, combine ice cream and flour. Stir until just combined.
  3. Pour mixture into prepared pan. Smooth with a spatula and top with rainbow sprinkles, if desired.
  4. Bake on the center rack for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  5. Cool for 5-10 minutes, then flip it out of the pan and let cool completely. Slice and serve!
