Funky Chicken Salad

Ingredients
  • 2 cups leftover, rotisserie chicken, chopped. 1/2 cup chopped bell peppers, I use multi color. 1/4 cup chopped celery. 1/4 cup chopped green onions. 1/4 cup shredded carrots. 1/2 shredded cheddar. 4 slices bacon crispy chopped. For the dressing. 1/4 cup mayo. 2 tbsp Dijon. 1 tbsp vinegar or lemon juice. 1 tbsp honey. Dash of Worcester and Franks 1/4 tsp garlic powder , 1)4 tsp paprika, 1/2 tsp parsley1/2 tsp dried basil and a pinch of red pepper flakes extra 1/4 cup dried fruit, 1/4 cup chopped nuts or seeds
Directions
  1. Chop cooked chicken. Chop vegetables. Cook bacon, chop. For the dressing. Mix Mayo, mustard, vinegar, honey, Worcester and Franks. Add salt and pepper to taste. I use about 1/4 tsp garlic powder, 1/4 tsp paprika , 1/2 tsp dried parsley, 1/2 tsp dried basil and a pinch of red pepper flakes. Mix everything together and taste see if you need more of anything add a little at a time and taste again, you can also add dried cranberries, chopped nuts, sunflower or sesame seeds, or anything you like.
