Sugar cookies with homemade pink sparkly buttercream
Ingredients
- Cookies:
- 1 cup softened butter
- 1 cup granulated sugar
- 2 eggs, room temp
- 1 t Vanilla extract
- 1/2 t Almond extract
- 3 cups All-Purpose Flour
- 2 t baking powder
- Icing:
- 1/2 cup salted softened butter
- 3 cups sifted powdered sugar
- 1 t Almond extract
- 1-3 T milk or half and half
- Pink food coloring
- Pink sugar sprinkles
Directions
- -Preheat oven to 350
- -Cream butter and sugar until light and fluffy
- -Add in eggs, vanilla and almond extract
- -Add flour and baking powder, and mix everything until
- Combined.
- -On greased or parchment lined baking sheets, use an ice cream scooper or big spoon, place on cookie sheet, and flatten slightly, keeping them still relatively shaped thick and like a ball
- -Leave room, as cookies will spread while baking
- -Bake for 8-12 minutes, but *NOTE* all ovens cook differently. Check them at 8min, and bake until there are just slightly starting to get golden around edges, almost still doughy looking
- -Let them rest on cookie sheets until cooled
- -Prepare icing ingredients. Add milk slowly, until you get the consistency of a nice buttercream
- -Frost cookies, and add sparkly
- Pink sugar sprinkles immediately after frosting
- Makes approx 12 cookies, depending on size
