Chocolate zucchini bread
Ingredients
- 2 cups grated zucchini
- 3 large eggs
- 2 cups sugar
- 3 tsp vanilla extract
- 1 cup canola oil
- 2 1/2 cups all purpose flour
- 1/2 cup baking cocoa
- 1/4 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp baking powder
- 1/4 tsp salt
Directions
- Preheat oven 350
- Grease two loaf tins
- Mix together sugar, vanilla and canola oil , eggs
- Set aside
- Separate mixing bowl grate zucchini ( I squeeze out excess liquid)
- Set aside
- Mix dry ingredients into wet and fold in zucchini until combined
- Do not over mix
- Pour into tins ( half in each)
- Bake 45-50 min
- I use toothpick to check So it doesn’t over bake
