Chocolate zucchini bread

Ingredients
  • 2 cups grated zucchini
  • 3 large eggs
  • 2 cups sugar
  • 3 tsp vanilla extract
  • 1 cup canola oil
  • 2 1/2 cups all purpose flour
  • 1/2 cup baking cocoa
  • 1/4 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp baking powder
  • 1/4 tsp salt
Directions
  1. Preheat oven 350
  2. Grease two loaf tins
  3. Mix together sugar, vanilla and canola oil , eggs
  4. Set aside
  5. Separate mixing bowl grate zucchini ( I squeeze out excess liquid)
  6. Set aside
  7. Mix dry ingredients into wet and fold in zucchini until combined
  8. Do not over mix
  9. Pour into tins ( half in each)
  10. Bake 45-50 min
  11. I use toothpick to check So it doesn’t over bake
