Aimée’s Italian Stew

  • 4 Italian sausages, casings removed
  • 2 boneless chicken breasts
  • 1 large sweet pepper
  • Quartered mushrooms in quantity desired
  • 1 can corn
  • 1 can green beans
  • 1 can kidney beans
  • 2 quarts canned tomatoes
  • Rehydrated minced onions as desired
  • 2 tsp. Johnny’s seasoning
  • 1 Tbsp. black pepper, coarse
  • 2 Tbsp. Italian herbs
  • Garlic as desired
  • Liberal dose ofWorcestershire sauce
  1. Cut mushrooms into quarters, and sear in hot pan to remove moisture
  2. Cut sweet peppers into desired size, and place with mushrooms to sear
  3. Cut chicken breasts in two across width of breasts, then slice into lengthwise strips, then slice in opposite direction into desired size chunks
  4. Cut sausages into slices in size desired
  5. Add sausage slices, chunks of chicken breast, and minced onion to hot pan with the mushrooms and sweet pepper to sear along with them
  6. After they have all seared nicely, and created a glaze on the bottom of the pan, add white or red wine to the hot pot to deglaze, and stir up the bits off the bottom to incorporate with meats and vegetables
  7. Now add the herbs, spices and Worcestershire sauce-stir in thoroughly
  8. Now add the corn, kidney beans, green beans, and two quarts of tomatoes
  9. Heat through
  10. Enjoy!
