Broccoli Rice & Cheese Casserole

Ingredients
  • 2-one pound bags of frozen broccoli or 2-3 heads of fresh broccoli-chopped in the blender & drained(I use fresh)
  • 2 Onions-Chopped (I use medium to large onions)
  • 1/3 cup of butter
  • 1 1/2 cups uncooked rice (I use minute rice)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup
  • 2 cups grated cheddar cheese + 1/2 to 1 cup to put on tops 5 minutes before it is done
  • Salt &Pepper to taste
Directions
  1. Preheat oven to 350
  2. I use one pot that can be used on the stove and then put in the oven when everything is mixed together (either my Corning Ware dish or my cast iron pot) with the lid
  3. Cook rice and set aside
  4. Sauté onions in butter
  5. Mix rice, cream soups, cheddar, salt & pepper & broccoli into the sautéed onion & butter
  6. Place in oven with the lid on
  7. Bake at 350 for 40-45 minutes
  8. 5 minutes before it is done, add the extra 1/2-1 cup of grated cheddar to the top
  9. Let sit 5-10 minutes
  10. Enjoy!
  11. Serves 6-8
