The queso sauce is mixed together in a large bowl before being poured over bite-sized cauliflower pieces. Made up of shredded cheeses, cream cheese, and evaporated milk, you know this stuff is going to be tasty. It gets a little kick from green chiles and taco seasoning, but could easily be spiced up even more if you like some heat.
Pop the dish in the oven for about 30 minutes, or until the top is just beginning to turn golden and the cauliflower is tender. Queso Cauliflower Bake

Ingredients
- 2 heads cauliflower, roughly chopped
- 2 cups shredded white cheddar cheese, divided
- 1 cup mozzarella cheese
- 1 (8 oz) package cream cheese, softened
- 1 (12 oz) can evaporated milk
- 2 (4 oz) cans diced green chiles
- 3 teaspoons taco seasoning
- 1 teaspoon salt
- ½ teaspoon garlic powder
- Cilantro for garnish
Preparation
- Preheat oven to 375 degrees F and grease a 9x13-inch baking dish.
- Add chopped cauliflower to the prepared baking dish and spread out in an even layer. Set aside.
- In a large bowl, add 1 cup of white cheddar, mozzarella, and cream cheese. Stir until evenly combined. Add remaining ingredients and mix until smooth.
- Pour cheese mixture over the cauliflower and top with remaining white cheddar.
- Bake for 30-35 minutes or until cauliflower is tender and top is beginning to brown.
- Garnish with cilantro and serve warm.
