Are you looking for a side salad with a bit of a kick? Our twist on the classic northern bean salad will have the whole family begging for more! With only three steps and a 20 minute prep time, we really couldn’t ask for a better dinner side dish. This lighter salad is packed with iron, fiber, and protein – all good things to keep your busy family filled up on those busy weeknights.

The secret to this version of northern bean salad is all in the dressing. Tangy lemon juice balances out with white wine vinegar, and the cumin and cayenne give a noticeable (but not overwhelming) kick! The nice thing about this salad is that it’s the perfect make-ahead side. While you can eat it after marinating only 20 minutes, the flavors really only get better with time. So feel free to make this the night before, you’ll be surprised how much flavor is in each bite!

Ingredients
  • 2 medium fresh ripe tomato, chopped
  • 2 cup white beans (Great Northern, navy or cannellini)
  • 1/2 cup red onion, thinly sliced
  • 3 tablespoons fresh cilantro, finely chopped
  • 3 tablespoons olive oil
  • 3 tablespoons olive oil
  • 2 tablespoon fresh lemon juice
  • 2 tablespoon white wine vinegar
  • 1 teaspoon fresh ground pepper
  • 1/2 teaspoon salt
  • 1 teaspoon cumin
  • 1/2 teaspoon cayenne
  • 1 jalapeño, seeded and sliced
Preparation
  1. Combine tomato, beans, onion, jalapeño, and cilantro in a medium bowl.
  2. In a smaller bowl, pour oil, lemon juice, and white wine vinegar. Add in pepper, salt, cumin, and cayenne. Stir to mix.
  3. Pour dressing over tomato bean mixture, toss to coat. Let sit at least 20 minutes to marinate.
  4. Enjoy!
