No-Bake Dessert Recipe: Green Grasshopper Pie

Grasshopper pie is one of those easy treats that really brightens our day and puts some bounce in our step. Maybe it’s the color, the yummy flavor, or the fact that it’s a breeze to make, but we look forward to making it and thought we’d share it with you! It’s delicious in those hot summer months, but we also make it when a certain green-centric holiday comes rolling around at the beginning of spring. If you guessed St. Patrick’s Day, you’re right on the money!

This dessert is easy and delicious, plus it’s a great one to get the kids involved in, as there’s no scary heat factor involved. If they can man a wooden spoon and rubber spatula, they can make majority of this themselves! For a fun and tasty activity, check this grasshopper pie out and prepare to be delightfully refreshed!

No-Bake Grasshopper Pie

Serves 8


  • 2 cups oreo cookies, center filling removed (or 1 store-bought oreo cookie pie shell)
  • 2 cups whipped cream (homemade or store-bought), plus extra for garnish
  • 1 (7 oz.) jar marshmallow cream fluff
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon mint extract
  • 3-5 drops green food coloring
  • chocolate shavings, optional


  1. If making your pie shell at home, place oreo cookies in food processor, drizzle in melted butter and pulse until coarsely ground.
    Note: if you don’t have a food processor, place them in a large, re-sealable bag and use a rolling pin or heavy object to break them into small pieces.
  2. Transfer ground cookies to pie dish and firmly mold them to form a pie shell.
  3. Place marshmallow fluff in a large bowl or mixer and pour in mint extract and green food coloring to achieve desired color. Mix until smooth.
  4. Once fully incorporated and smooth, gently fold in whipped cream until just combined.
  5. Pour marshmallow mixture into pie shell and carefully smooth it out with a rubber spatula.
  6. Refrigerate at least 2 hours before serving, then garnish with whipped cream and chocolate shavings.
