When it comes to casseroles, I thought I had tried everything out there. I’m happy to be proven wrong! This Mexican Ground Beef Casserole is quickly rising to the top of my list for easy, hearty dinners. With seasoned beef, corn, green onions, salsa, and enchilada sauce, you can be sure this casserole packs plenty of flavors. Oh, and did I mention cheese? There’s plenty of ooey-gooey cheese in here too. If you’re looking for an easy weeknight meal the whole family will love, then this is the recipe for you!

Mexican Ground Beef Casserole

To get started on this easy weeknight meal, preheat the oven to 350°F. Prepare a 9×13 baking dish by spraying it with cooking spray, then set it aside. Grease a skillet with cooking oil and place it over medium heat on the stove. When hot, add ground beef and cook until browned. Combine ground beef with taco seasoning, water, and chopped green onions. Stir in salsa and corn kernels. Set mixture aside.

Now it’s time to assemble this masterpiece! First, layer corn tortillas along the bottom of the prepared baking dish. The number of tortillas might change depending on if you’re using corn or flour. The flour tortillas tend to be bigger than the corn tortillas. Either way, just make sure you’ve covered the bottom of the dish!

Mexican Ground Beef Casserole

Nest, top the tortilla layer with 1/3 of the diced hatch chiles, ground beef mixture, Mexican cheese blend, and enchilada sauce. Repeat the layers twice in that order, then top everything off with the remaining cheese. Cover with foil and bake at 350°F for 45 minutes. Then, remove foil and bake for another 10 minutes.

Allow Mexican ground beef casserole to sit loosely covered with foil for 10-15 minutes before serving. Top with green onions and fresh diced tomatoes. Serve and enjoy! This meal is one for the books!   • 2 lbs. ground beef, cooked and drained
  • 1 taco seasoning packet
  • 3/4 cup water
  • 1 cup green onions, chopped
  • 1 cup corn kernels, thawed from frozen, or freshly cooked
  • 2 cups salsa
  • 18 6-inch corn or flour tortillas
  • 2 1/2 cups hatch chiles (five 4 oz. cans of diced chiles)
  • 1 1/4 cup enchilada sauce mild
  • 2 cups Mexican blend cheese shredded
  • Chopped green onions and fresh tomatoes for garnish
