When I make coffee, I make a lot. While I can generally polish off the entire pot of fresh ground coffee, I have a jar of instant coffee sitting in my pantry, chronically neglected. If you’re a baker, then using up your instant coffee is no problem. When making things with chocolate, I add instant coffee to bolster the flavors of sweet or savory recipes, yet I seldom drink instant coffee as is, and instant coffee is seldom the star ingredient. I’m always on the search for new ways to use my food. So when I came across this layered creamy recipe for a fluffy coffee mousse recipe, I knew I had to have my coffee and eat it too.

On the YouTube channel One day One recipe, you see how a ho-hum pantry classic gets revamp. Leftover coffee is barely a recipe, and the trend of whipped coffee has faded into the limelight. But here, a bit of heavy cream and a smooth vanilla-laced paste changes the game, softening the harsh flavors of coffee. In a saucepan, mix your instant coffee with heavy cream and sugar, creating a thick paste.

If you wanted to make the mixture even fancier, you could add a bit of caramel or cocoa powder to add a different bit of dimension. Here a bit of vanilla is added to add complexity. After a few minutes, it’ll become a smooth paste. Transfer the paste to the freezer to chill for three to four minutes.

Using a large and clean bowl, mix your heavy cream with some powdered sugar and whip it with an electric mixer. You need the speed to get the fluffiness, so don’t you think you can cut corners and use an old-fashioned whisk. Using a whisk will surely leave your wrist throbbing from all of that work, but it won’t be as fast.

Halfway through the whipping process, add in the chilled vanilla coffee paste and finish whipping it all together. It’ll be a beautiful soft creamy color.

The cream is so addictive you won’t be able to portion it into small cups — you’ll want the whole bowl for yourself! This cream is excellent to eat on its own with a dusting of cocoa powder, but the cream would taste even better as a no-bake pie filling or a layer in a delicious berry trifle.
