Chocolate pudding is a snack most of us remember well from childhood onwards. You can of course buy pre-made pudding cups, or you can make it from scratch at home. But, an even easier and healthier solution is to make a version using yogurt. With this no-heat chocolate pudding recipe you’ll get all the flavor and creaminess of chocolate pudding without the guilt.
This basis for this recipe has only 3 ingredients: unflavored Greek yogurt, Dutch cocoa, and maple syrup. We also added some ground cardamom for a little more grown up flavor, but you can omit this if you like. We also like using the full fat Greek yogurt, but you can use the zero fat kind if you’d prefer. It will lack some of the silky texture, but on the plus side the finished result will be even healthier.
The preparation of this dessert couldn’t be easier. Simply chuck it all together and blend with a hand mixer or whisk. The most important step is to buy the right kind of cocoa powder. Natural cocoa powder doesn’t have as intense or as mellow of a flavor. If you use regular cocoa powder in this recipe it will not come out rich and dark. Dutch cocoa powder has been treated with an alkalizing agent to help the flavor and to increase solubility and this is the type of cocoa powder most common in Europe.
Most supermarkets today carry both kinds of cocoa powder, but some stores don’t have it. However, it’s worth making the effort to obtain for the simple pleasure of enjoying this healthy “pudding”.
This is literally the easiest dessert you could possibly make. Plus you get the nutritional benefits of yogurt with each serving, something regular pudding cannot offer. For a nice addition some sliced fruit on top makes this an even more nutrient-rich dessert that you don’t have to feel bad about making.
While this isn’t a keto or sugar-free dessert, it is much healthier than your standard chocolate pudding, which makes it a win-win in my book.
