Life is never an easy run of things, especially when it comes to food. As prices increase, so does the pressure to keep afloat. When in a pinch people come up with interesting ideas. Take this sandwich that uses a ho-hum topping and turns it into the main attraction of the meal.

The onion sandwich. Yes, you read that write. Many harken its origin back to 1920s France, where a bistro served onions and mayonnaise on sections of brioche bread, but it never got beyond a small finger food. The recipe provided by the James Beard Foundation shows that despite the onions’ strong smell, they can transform into well-mannered finger food, parsley garnish, and all.

But that’s not what we’re seeing today. Here, with this quick hack Old’s Cool Kevmo, onions become the hefty main character of the sandwich.

To start, garlic is roasted with thyme in a tin foil pouch. Once soft and pliable, the garlic cloves are squeezed out of the garlic head and mixed with mustard, mayonnaise, more thyme, and lemon juice — creating a balanced, flavor-packed condiment.

Next, thick slices of both red and white onions are placed in a greased frying pan and cooked down until caramelized. As you flip the onion slices, you’ll want to be careful to keep the ring sections in tack.

Using a technique for finishing steak, Kevmo takes thyme and more butter, spooning the hot butter over the onions and the herbs. This process adds more aroma to onions and further breaks the hard and raw texture.

After toasting and smearing a healthy portion of herbed mayonnaise over the bread, the warm onions are stacked thick onto the bread.
