The low-carb boom has a lot of casual dining establishments looking to play catch up. Chipotle is definitely one of them. They threw their card in the plant-based game when they released their signature tofu sofritos.

Now, they’re formulating a low-carb option: cauliflower rice

Cauliflower rice is not only a low-carb option but also a plant-based-friendly option! While white and brown rice are both plant-based as-is, Chipotle is looking to expand the options for both their low-carb and plant-based visitors. Chief Executive Officer Brian Niccol said in an interview with Bloomberg, “What we want to do is make the world’s greatest cauliflower rice, as opposed to process something and make it seem like it’s something else.”

Chipotle has always placed value on keeping things short and simple, with the menu boasting just 53 ingredients. As the company introduces more options to please a wide selection of customers, Chipotle is determined to continue keeping things simple and clean.

Cauliflower rice is being looked into so that customers on low carb diets do not have to skip the restaurant. This is the type of proactive thinking that is sure to win over hearts (and stomachs). More items that are made from black beans are sure to be added to the menu. “We’re in the early days of it,” said Niccol of the experimentation.
