Enchiladas are made with tortillas. I think we can all agree on this. This bake, however, does not feature a single tortilla… so let’s just go ahead and call it ‘enchilada-inspired.’ While it may not be in any way traditional, what it is is a bubble up style bake that makes it super simple to get zesty enchilada flavor on even your busiest weeknight. Since there are no tortillas to roll, it means there’s very little prep – but you still get lots of yummy flavor!

So what is a Bubble Up? Good question. A bubble up is basically a casserole, but an easier, modernized, fun casserole. Morsels of refrigerated biscuit dough (or dumplings, or breadsticks, or even pretzel dough) top a delicious saucy concoction in a casserole dish, and as it simmers in the oven, the dough plumps up and the sauce below “bubbles up” and surrounds the biscuits with flavor. There are lasagna, chili cheese dog, and dessert versions… but this one is especially delicious.

Here, the bottom saucy layer is made up of browned ground beef, black beans, and enchilada sauce. You stir in cut up biscuit dough and pop it in the oven until the biscuits have plumped up in all that zesty goodness, and then you top it with a bit of cheese and bake it just long enough for the top to get nice and melty.

That’s just five ingredients and a few minutes of effort to get this into the oven and then all you have to do is enjoy the best part, which is sitting down to eat this! Bubble ups are a simple way to get a comforting bake on the table without the trouble of pre-cooking rice or noodles (or in this case, rolling tortillas) and this simple but scrumptious flavor combo is one you’ll want to keep coming back to.

Ingredients
  • 1 lb lean ground beef
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (10 oz) can enchilada sauce
  • 1 (16 oz) can refrigerator biscuits
  • 1 1/2 cups shredded Mexican Cheese blend
  • Kosher salt and freshly ground black pepper, to taste
For serving:
  • Sour cream, as needed
  • Green onions, sliced, as needed
Preparation
  1. Preheat oven to 350°F and grease an 8x11-inch baking dish with nonstick spray.
  2. In a large skillet over medium-high heat, season ground beef with salt and pepper and brown until no longer pink. Drain fat, if needed.
  3. Stir in enchilada sauce and black beans and pour mixture into baking dish.
  4. Cut each biscuit into quarters and add to ground beef mixture. Gently stir to combine, making sure biscuit dough is arranged evenly across the dish.
  5. Bake until biscuits are cooked through, about 25 minutes. Top with cheese and return to oven for 10 minutes more. Let sit 5 minutes before serving. Enjoy!
