This simple recipe calls for an overripe banana, 1 cup rolled oats, and 1/4 cup of raisins, craisins, or walnuts. This last ingredient can be customized to suit your own particular cravings.
- Preheat oven to 350°F.
- Cover a cookie sheet with tin foil or parchment paper. Lightly coat with cooking spray, olive or coconut oil to prevent cookies from sticking to the baking sheet.
- Mix all of the ingredients together in a large bowl, using your hands or a soft spatula.
- Scoop about a tablespoon or so of the mixture and roll into a small ball, flatten slightly to form a round cookie. Place cookie on the prepared baking sheet. Bake for 15-20 minutes.
These cookies are just what you’ll need to satisfy that sweet tooth without any of the guilt. It’s also a great recipe to make with the kids because of the simple ingredients and the hands-on mixing.
