One of our favorite parts about summer is the delicious produce that finally comes back into season, that we’ve invariably been looking forward to all year. Tomatoes, summer squash, peppers…we can’t get enough of ’em!

While you could grill them or roast them, our favorite way to make summer veggies is to stuff them with basically anything we can get our hands on. With sausage, beef or chicken, or just keeping them vegetarian-friendly with rice and potatoes, there’s no wrong way to stuff your summer veg. Trust us.
