Did you know you could make bread in your slow cooker?! That’s right, instead of having to use your oven, you can free up space (and keep your kitchen cool) by using a crockpot!
Our bread was perfectly cooked and had a nice, lightly firm crust that we couldn’t get enough of…after making this shocking discovery we might never go back to cooking it in the oven, we loved our whole wheat loaf that much!
Slow Cooker Whole-Wheat Bread
Yield: 1 loaf
- 1 tablespoon active dry yeast
- 1/4 cup lukewarm water
- 2 1/2-2 3/4 cups whole wheat flour
- 1 cup warm buttermilk
- 3/4 cup rolled oats, divided
- 1/4 cup wheat germ
- 1 egg
- 2 tablespoons olive oil
- 2 tablespoons honey
- 1 1/2 teaspoons salt
- Take two sheets of aluminum foil and roll them up into a long log. Form log into a circle and set aside.
- Turn slow cooker on HIGH to preheat and line a loaf pan or deep glass bowl with parchment paper.
- Stir yeast into lukewarm water and set aside for 5 minutes, or until frothy.
- In a large bowl or mixer, stir together buttermilk, 1/2 cup oats, wheat germ, egg, oil, honey and salt until combined, then mix in yeast mixture.
- Starting with 2 1/2 cups, mix in flour and knead until an elastic dough comes together. 5-7 minutes.
Note: if dough is sticky and not elastic, mix in a little more flour until smooth.
- Transfer dough to your lined bowl, sprinkle remaining oats over the top, and cover with foil. (Leave enough space for the gases from the yeast to escape.)
- Place aluminum log circle in the bottom of slow cooker and pour 2/3 cup water into the slow cooker.
- Take dough bowl and place it on top of the aluminum foil “trivet,” making sure it doesn’t touch the sides of the cooker.
- Cook bread on HIGH for 3 hours, or until browned and no longer spongy to the touch.
Note: cooking time varies depending on your slow cooker. Start checking on bread after 1 1/2 -2 hours, then check every 30 minutes.
- Remove bread from slow cooker and place it under the broiler for 5 minutes, or until crust is a deeper brown and has firmed up more.
