Take a comforting cup of coffee and a sweet ice cream float and mix them up into one jiggly jello treat and you’ve got Coffee Float Jello! It’s a fun new way to enjoy your cuppa joe and it’s the perfect way to get a caffeine fix when the weather’s warm. If you’re feeling a little tired of your regular iced coffee, you’ve got to give this a try.

This treat is kind of like jello all grown up. First you form the coffee layer and cut it into cubes, and then you melt some ice cream and mix in some gelatin before pouring that around the coffee cubes. It’s easy, delicious, and we think it’s just so pretty!

Ingredients
  • For the coffee jello:
  • 3 envelopes unflavored gelatin
  • 1 cup cold coffee
  • 3 cups hot coffee
  • 1/2 cup + 2 tablespoons sugar
  • pinch of salt
  • For the ice cream jello:
  • 3 envelopes unflavored gelatin
  • 1/2 cup cold water
  • 1 cup boiling water
  • 1/4 cup sugar
  • 2 cups vanilla ice cream
Preparation
  1. Make the coffee jello:
  2. In a medium bowl, stir gelatin into cold coffee and let stand 10 minutes until softened. Add hot coffee, sugar, and salt, and stir until completely dissolved.
  3. Pour into a 9x13-inch baking dish and refrigerate until firm, at least 4 hours. Once chilled, cut into cubes and transfer to an 8x8-inch baking dish. Chill while you make the ice cream layer.
  4. For the ice cream layer:
  5. Sprinkle 3 packets of gelatin over cold water and let sit until softened. Pour boiling water over and stir until dissolved. Stir in sugar and set aside.
  6. Place the 2 cups of ice cream in a small bowl. Microwave until it's liquid. Stir the melted ice cream into the gelatin mixture, and let it sit until it comes to room temperature.
  7. Pour the ice cream mixture over the coffee cubes in the baking dish and chill in the refrigerator overnight. Cut into cubes and enjoy!
