When fall rolls around we start to think of two things: tailgates and snacks. Regardless of whether or not you’re watching the big game, a buffet table filled with delicious snacks is always a win for the home team. We’ve got the snack to beat all snacks; they’re big, bold, and beyond delicious and they’re called Buffalo Chicken Bombs for good reason. Bacon, onion, and buffalo chicken hot sauce are a triple threat when it comes to these beauties. Expect to hear folks saying “Hmmm, there’s something wrong with that, I think I’ll need another one just to be sure.”

We’ve taken a rotisserie chicken and shredded it up, then added a generous amount of our favorite buffalo chicken wing barbecue sauce. For even more flavor, we’ve got sliced green onion and a little bit of mozzarella cheese. Bacon and onions are the last two ingredients and they’re all rolled together to make one of the most amazing stuffed treats you’ve ever seen. Now, if spicy isn’t your cup of tea, then go with something milder, especially if kids are around; a barbecue sauce or mild buffalo sauce can be a much friendlier alternative, or cool things down with a ranch or bleu cheese dressing for dipping.

It’s safe to say that these are a game-winning appetizer to serve up at any party or tailgate. Who can resist the combination of bacon, onion rings, and buffalo chicken? Big and bold on flavor and just fun to look at, our Buffalo Chicken Bombs are always a big hit when served at our buffet table. Be sure to have a few extra napkins and some glasses of water to keep everyone clean and cool. We can’t think of a better way to get fired up for the big game than with these on our plates!

Ingredients
  • 2 cups shredded chicken
  • ¾ cup buffalo wing hot sauce
  • ¼ cup green onions, sliced
  • ½ cup mozzarella cheese, shredded
  • 3-4 medium yellow onions
  • 1 package bacon
  • Additional hot sauce for serving
Preparation
  1. Preheat oven to 425°F.
  2. Mix chicken, ¾ cup hot sauce, green onions, and cheese until well-blended.
  3. Cut top and bottom of each onion, then slice onion in half and peel off skin. Separate onion into layers, reserving the larger outside layers for stuffing.
  4. Scoop approximately ¼ cup of chicken mixture and stuff between 1-2 onion layers. Wrap each onion-chicken ball with 2-3 slices of bacon. Secure each bacon-onion-chicken ball with a skewer or toothpick.
  5. Bake on a wire rack over a baking sheet for 30-40 minutes, or until bacon is fully cooked. Serve with more buffalo chicken hot sauce for dipping.
