It’s no surprise that we love cooking up new and exciting things in the kitchen, but sometimes we like a little extra push – in the form of a challenge, you could say – to get our creative cooking juices flowing and get us to come up with new, delicious recipes. Especially satisfying, is when we’re given the task to combine two or more dishes that don’t seem to go together at all, but that, in the end, blend into a cohesive dish.

In a new series we’re calling Project 9×13, we’ll be given at least two unusual themes or ingredients to incorporate into a new recipe. These themes will be items that aren’t usually baked in a 9×13 baking dish, so the intent is to turn them into an amazing casserole that the whole family can enjoy.

Here, we were prompted to combine a New Orleans classic, jambalaya, with a Mexican staple, enchiladas. We were really pleased with what we came up with – it tasted great and combined flavors and concepts beautifully, if we do say so ourselves! Without further ado: jambalaya enchiladas!
