If you haven’t tried them already, jump on the chia seed train! Chia seeds grow primarily in South American and have become known as being a modern day superfood. (The Aztecs and Mayans were way ahead of the game when chia seeds were a big part of their daily diet.) Packed with amazing nutrients, fiber and protein, chia seeds are ridiculously good for you and so delicious when you prepare them like this! The seeds absorb when placed in liquid and take on a thick, pudding-like consistency, so what better way to use them than in a pudding?!
As you may have noticed, we have quite a big sweet tooth over here, so anything we can find that’s sweet and delicious and also really healthy gets an A+ in our book. Plus, making a healthy dessert or on-the-go breakfast doesn’t get much easier than this; throw it all in a glass and you’re good! This pudding is sinfully rich, but you don’t have to worry about it, because you’re doing your body a favor! Whip this up (it does require some forethought because it needs to chill for a while), and thank yourself later when you’re able to begin or end your day on a great note.
Chocolate Chia Seed Pudding
- 1/4 cup, plus 1 tablespoon chia seeds
- 3/4 cup unsweetened almond or coconut milk
- 2-2 1/2 tablespoons unsweetened cocoa powder
- 2 teaspoons honey
- 1 teaspoon pure vanilla extract
- 1 pinch sea salt
- 5-6 medjool dates, minced, optional
- In a sealable, glass container, pour in milk, honey and vanilla extract and stir to combine.
- Pour in chia seeds, cocoa powder, salt and dates (if using), and use a fork or whisk to vigorously mix together.
- Place jar in refrigerator and chill for at least 6 hours, or until thickened and pudding-like.
- Before serving, stir well, taste and adjust seasoning, if necessary, and garnish with fresh fruit.
Note: freeze almond milk in an ice cube tray and mix with all ingredients in a blender to be able to enjoy pudding faster, since it speeds up the chilling process.
