Sweet Potato Kale Fritters

Fritters tend to pack a wallop in the calorie department, but we’ve solved that problem by coming up with a guilt-free version that combines sweet potatoes, kale, and quinoa! The kale gives us ample amounts of vitamins A and C, plus, we get lots of fiber and iron from the quinoa, so this dish is great for you — and it tastes decadent and indulgent. Now that’s a winning combo! Get the healthy recipe here!

Zucchini Quinoa Fritters

To us, there’s nothing better than something that tastes sinfully delicious, but that’s actually health food in disguise; something that feels indulgent, but that’s actually doing your body a favor…. These veggie fritters do just that.

Zucchini Fritters

Super versatile, this recipe offers plenty of room for other veggies too – just add in some shredded carrots or diced red peppers if you’d like a little more color and want to use a variety of veggies. Not a fan of feta? No problem work in a different cheese instead. Perfect with a bit of sour cream, yogurt, or a different dipping sauce, these zucchini fritters are a treat. Creamed Corn & Ham Fritters

We love creamed corn and we especially love coming up with ways to breathe new life into it once we’ve had it three days in a row and still have leftovers. In that case, our favorite way to repurpose it is to whip up a batch of crispy, ham-filled corn fritters! (Not all of our recipes can be healthy, after all. It’s about balance!)
