Today's recipe comes from our friends at Grassroots Gourmet, a Washington, D.C.-based bakery. This delicious recipe was recently featured in the Food Lover's Guide to DC. I have personally tried their treats and let me attest: they are out of this world. Enjoy!
Peanut Butter Buttercream
Ingredients:
1 pound of confectioners’ sugar (1 box)
1 ½ pounds of unsalted butter, room temperature
2 teaspoons vanilla extract
3 tablespoons of heavy cream
To make the frosting:
In the bowl of an electric mixer with a paddle attachment beat the butter on a medium speed until smooth and creamy, about a minute.
Reduce mixer speed to low and add the confectioners’ sugar for another minute or so.
Scrape down the sides of the bowl. Then add the vanilla and cream. Beat on medium until light and fluffy, about 2-3 minutes.
Add the peanut butter and mix until combined.
Use the frosting immediately. Any leftovers can be stored in an airtight container in the refrigerator for a few days. When ready to reuse, let the frosting come to room temperature and beat again in the mixer to make it fluffy. Additional heavy cream may be added if needed to loosen it up.
Use this delicious buttercream with a rich chocolate cake to achieve the perfect combination of flavors.
